What about sugar? Taken care of; all those that are restricted from added sugar (Cross Fit, Paleo, Keto Diabetics, etc.) We only rely on what nature provides naturally in each vegetable. No need to rush the process either, good things develop best over time. Our kimchi is still made by hand in small batches and then fermented for at least two weeks in our fermentation cave before it is jarred and then allowed to slowly ferment in our commercial refrigeration. Longer fermentation increases the health benefit of this Super-food. Our belief is the older the better but that’s up to your personal taste. Some like it “picklier” but it’s hard not to eat so fast. No added-sugar. Not sure why other brands even add this in the first place. We believe in fighting our sugar addiction by never adding additional sugar. We rely on what nature provides in our vegetables only.
